Recipe: Ugly Sweater Holiday Cookies

Tis the season for holiday parties, ugly sweaters, and most definitely cookies. Our pastry chef, Joshua Graves, shares his recipe for ugly sweater holiday cookies.

UGLY SWEATER HOLIDAY COOKIES

Cookie Ingredients:

2 cups All-Purpose Flour
1/2 cup Sugar
Pinch Salt
1 stick + 1 Tbsp Butter, cold, cubed
1 whole Egg
1 Tbsp Vanilla Extract

Directions:

  1. Combine all dry ingredients and butter in the bowl of a stand mixer with a paddle attachment. 
  2. Mix in low speed until the mixture looks like wet sand.
  3. Add the egg and vanilla extract, mix until combined and the dough is uniform.
  4. Remove from the mixer and pat into a 1-inch thick square, wrap in plastic and refrigerate for 1 hour.
  5. Remove the dough from the plastic wrap and roll out to 1/4” thick on a well floured surface. Using the sweater
  6. cutter, cut out the dough and refrigerate for 30 minutes or until firm.
  7. Preheat the oven to 350 degrees Fahrenheit and place the cookies on a baking sheet lined with parchment. Bake
  8. for 15-20 minutes until golden brown. Cool on a wire rack.

 

Cookie Glaze Ingredients: 

1 1/2 cups Powdered Sugar
2 Tbsp light Corn Syrup
2 Tbsp +2 tsp milk

Food Coloring, as needed

Directions:

  1. Combine all ingredients in a bowl and mix until smooth. Add food coloring to reach the desired color.
  2. Dip one side of the completely cooled cookies in the glaze letting some excess drip off and place on a clean cookie sheet or plate with the glazed side facing upwards.
  3. Let the cookies dry until the glaze is set.

 

Royal Icing Ingredients: 

3 oz Egg Whites
4 cups Powdered Sugar
Food Coloring, as needed

Directions:

  1. In the bowl of a mixer with a whisk attachment, place the egg whites and whip until frothy and double in size.
  2. Add the powdered sugar and continue to whip until shiny and holds a stiff peak (2 minutes)
  3. Add food color as desired.
  4. Once the glaze on the cookies have dried, place the Royal Icing in a piping bag with a small round tip. Decorate the cookies as desired and let the cookies dry.
  5. Store in an airtight container for up to 4 days.
